“Le Sélys: the ideal place for me give full rein to my desires, to my inspiration, which take me back, with profound respect for its produce, to the great classics of local cuisine. »
Raphaël Sabel, chef of the Sélys, Belgian Master-Chef
“Le Sélys”, gastronomic restaurant
On the ground floor of the old Sélys Longchamps house is the “Le Sélys” gastronomic restaurant.
It has an independent entrance from the hotel and is open, like most of its facilities, to non residents.
Seating 40 inside, le Sélys has an aperitif area and two dining rooms, including the Lovinfosse room (named after a Liège artist) decorated with Chines frescos dating from the 18th century. The restaurant also has a South-facing terrace seating 50, with an unbeatable view of the glowing city. Three adjoining private rooms are also available for private meetings with or without catering.
Determinedly top-of-the-range, the Sélys has entrusted its kitchens to one of the most promising chefs of his generation: Raphaël Sabel, fellow, of the “Disciples d’Auguste Escoffier” and of the “Académie culinaire de France”, among other associations.
